Guy's Tofu Potato Side Dish

Try this great side-dish when dealing with high cholesterol. "Guy's Tofu Potatoes are delicious and healthy.

Ingredients:

  • 1/2 cup canola oil
  • 1 lb. firm tofu, cut into small cubes
  • 4 medium potatoes, cut into small cubes
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. mustard seeds, optional
  • 1/2 tsp. Italian herb seasoning, optional

Heat oil in a heavy skillet. Add tofu, potatoes, salt, pepper, mustard seed, and Italian seasoning. Cook over medium to low-medium heat, stirring frequently, until potatoes are cooked (can be easily pierced with a fork).
